BALSAMIC: Most of us are familiar with Balsamic-inspired products which are primarily vinegar-based and made to emulate the texture and flavor of the original balsamic. For it, traditional balsamic vinegar is only made from the juice of local white grapes in Reggio Emilia and Modena, Italy, and is aged for a minimum of 12 years under the strict watch of a special certification agency.

PERSILLADE: Persillade is the culinary term for a chopped mixture of garlic and parsley, and may include herbs, oil and vinegar. The name originates from the word ‘persil’ which is the French word for parsley.
